1 onion, peeled and diced
1 medium potato, peeled and diced
50g/2oz butter
1.2 litres/2 pints vegetable or chicken stock
350g/12oz frozen peas
8 leaves of fresh mint, finely chopped
Crispy Parma ham
Grated parmesan cheese
Melt the butter over a medium heat in a heavy based saucepan and add the onion and potato. Sweat until soft but not coloured. Add the stock and bring to the boil, then cover and simmer for 20 minutes. Add the frozen peas and reduce the heat and simmer for 3 to 4 minutes. Remove from the heat and add the mint. Blend with a hand-held blender, season to taste and ladle into warm soup bowls.
Top with a grated Parmesan and crispy Parma ham and a sprig of fresh mint. and crispy Parma ham. Serve with fresh brown bread.
